You do get a stereo-ish effect that way, but spend a few minutes getting the levels in the room right first. I’d position the mic across the room and try to point one side at the guitar cab and the other at the bass cab (roughly) with drums in the middle. It can handle a decent amount of SPL with some careful placement. We all wore earplugs, drummer had a heavy hand and both the guitarist and I (on bass) turned up to compete with the drums. I’ve had an older Rode iXY (30-pin) for years and used to use it (with a Lightning to 30-pin adapter into an iPhone 7 and iPhone XS) all the time for band practice.
